Family farm
The Sartori family, of Vagner Dias, his wife Juliana and their son Gael, run the Batea do Valter Satori farm in Castelo. Hailing from Italy, the property has been in the family for over 100 years.
The farm itself is 69 hectares in total, with just 7 hectares dedicated to growing coffee. With 20 thousand coffee trees, the harvest was selectively handpicked by the family itself. Vagner's parents, Enedina and Valter, his brother, Evaldo, all pitch in with the picking
Washed process
Coffees from Brazil are usually proccessed natural or pulped natural so we were very excited to cup this washed lot from our friends at Osito.
Red & Yellow cherries are picked, depulped and fully washed before they are dried to the desired moisture content and prepared for milling.
We find this cup profile to be very clean, showcasing the "true nature" of the varietal. A classic refined profile perfect for black espresso and pairs well with milk.
