Jairo Arcila
Jairo, his wife Luz Helena and their two sons Carols & Felipe are co-founders of Cofinet. Jairo bought his first farm "La Esmeralda" in 1897. Now, with the help of his sons, Jairo has greatly improved the picking sorting and processing of his coffees. This lot of Papayo is a very rare varietal, known for it's fantastic flavour profile.
Exteneded Washed
Jairo is know for many experimental processinbg methods. This coffee however, is a fantastic example of precise processing method that intensifies the fruity character of the Papayo.
This coffee is harvested at peak ripeness, floated and hand sorted to remove any defects. The ripe cherries are then exposed to a 30hr underwater fermentation before being pulped. Following a gentle wash, the parchment is slowly dried to reach the desired moisture content.
