This lot leans into a jammy sweetness with a thick, rounded body and perfumed florals, while keeping a clear, terroir-driven profile. Balanced and structured, it’s a great example of his style in the cup.
Ripe cherries are handpicked at peak ripeness. Held in cherry for 48 hrs. Depulped, washed and dry fermented for 48hrs. Dried on raised beds for 20 days until perfect moisture content is reached."
